Avocado and Chard salad with Tangerine aroma

The perfect way to include the Citrus peel in your diet!
The tangerine peel is the star of this recipe, it gives a fresh citrus taste to the entire dish and, together the other vegetables, provides an high quantity of vitamins and fibers. I suggest to crumble the tangerine peel with the garlic masher.
It’s a quick and easy meal, so different from the most popular salads.

Preparation time: about 10 minutes
Cooking time: -
Class: cheap, very healthy

Serves 2

Ingredients:
1 ripe avocado
½ onion, peeled and finely chopped
4
tbsp. fresh squeezed lemon juice
about 7 oz. (200g) chopped chard, clean
salt to taste

6-7 tbsp. extra virgin olive oil
2 -3 tbsp. fresh organic tangerine peel, crumbled

Method:
1. Peel the avocado, then slice it and put into a food processor. Add onion and 2 tbsp. of lemon juice, and blend together, reducing to a thick puree.
2. Spoon the avocado puree into each serving plate and place on it a portion of chopped chard. Season each portion with salt, oil and lemon juice. Sprinkle with tangerine peel and serve immediately.

Crunchy Salad

Insalata croccante
Try this delicious healthy raw salad.
Ingredients:
1 yellow Bell Pepper
1 green apple
a bunch of spicy arugula leaves
2 tbsp. flax seeds
6 tbsp. extra virgin olive oil
4 tbsp. fresh squeezed lemon juice
a pinch of salt
black pepper to taste

Method:
1.       Finely slice the bell pepper and the green apple. Put them into a large serving bowl. Add arugula, flax seeds, extra virgin olive oil and lemon juice. Season with salt and balck pepper, and gently mix all together[1].




[1] At  this point, taste the salad in order to decide if to add more salt.

Arugula salad with Green Apple and Peanuts

What do you think about a delicious arugula salad? I made this salad combining the spicy arugula of my back yard, a sliced green apple, and some peanuts. I seasoned it with extra virgin olive oil, salt and fresh lemon juice. The result was amazing!

Portulaca salad

Today I ate this one! It's the portulaca grass! It grows up spontaneous in my back yard! It's absolutely organic! I seasoned it with extra virgin olive oil, salt and fresh lemon juice. For what I know, the portulaca is one of the most powerful antioxidant.

Italian Tomato salad

This is the season of the tomato salad. In Italy we eat a lot of tomato salad, almost every day in the summer. The salad will have the best flavor if you make it with the freshest tomatoes you can find. I like to add a sliced avocado into my tomato salad; but that is just my personal taste because our traditional Tomato salad doesn't include an avocado.
 


Ingredients:
1 lb (450g) fresh tomatoes of different colors: green, yellow, orange and red,
1 garlic clove, peeled and chopped,
1 onion, peeled and chopped,
1 tbsp. dried oregano,
a few basil leaves,
9 tbsp. extra virgin olive oil,
salt, about ½ tsp.
hot pepper (optional).
Method:
1. Slice the tomatoes and put them into a large serving bowl. Add garlic, onion, oregano, basil and extra virgin olive oil. Season with salt and gently mix all together . Add hot pepper if desired. Taste before serving in order to decide if you have to add more salt. Serve with toasted or grilled bread and a glass of good wine.
